How to make Cream Caramel

Cream caramel is a beloved dessert known for its smooth texture and rich caramel flavour. 

Though it may seem challenging at first, making cream caramel is actually quite simple, here’s a quick guide to creating this delightful treat at home.

Ingredients

100g sugar

100ml water

500ml milk

115g sugar

A few drops of vanilla extract

2 whole eggs

4 egg yolks

Step 1: Make the Caramel In a saucepan, combine 100g of sugar and 100ml of water on low heat, stirring until dissolved. 

Increase the heat and allow it to boil without stirring, as this helps prevent recrystallization. Watch closely as it thickens and turns a beautiful amber colour.

Step 2: Coat the Pots with Caramel. Pour the hot caramel into each pot and quickly swirl to coat the insides before it hardens.

Step 3: Make the Pudding Mixture In a mixing bowl by combining 115g of sugar, two whole eggs, four egg yolks, and a few drops of vanilla extract. Warm the milk (without boiling), then add it gradually to the egg mixture. Strain the mixture through a sieve into a measuring cup.

Step 4: Bake the Pudding Fill each pot with the pudding mixture, place them in an oven tray, and add hot water until the pots are submerged about two-thirds. Bake at 175°C for 45 minutes, ensuring the water doesn’t bubble.

Step 5: Serve and Enjoy! Let the puddings cool, refrigerate them for a day, then carefully loosen them with a knife. Flip each pot onto a plate, letting the rich caramel sauce drizzle over the top.
